Before starting this easy dip recipe have these ingredients ready. Chicken breasts cut bite size,1/2 pound bacon ( or more), good handful or two of fresh basil leaves, 1/2 garlic clove, 2-3 onions ( sliced thin), good handful of Italian bread ( no crust ), olive oil, about 1 cup of grated parmigiano cheese, salt and pepper
In a large frying pan add a good splash of olive oil and saute the chicken and sliced onions on medium heat till cooked through. Season with salt and pepper.Pu aside.
Spoon the chicken and onion into a food processor and add the basil, garlic, bread, parmigiano and a splash of olive oil.
Purée until smooth. You might have to add a bit of water to make it to preferred consistency. Taste for seasonings.
Place some bacon in the oven or microwave until extra crispy and cut into small bits. Place to spread in a serving bowl and top with bacon bits - garnish with toasts.
