Beans, Beef and Celery
This recipe is perfect if you have any left over cooked beans.
Sautee ground beef with some chopped onions and season with salt/pepper and preferred seasonings. Cover with white wine and allow to reduce on high heat until the wine is almost evaporated . Add the beans - continue to cook on low heat , cover and simmer for about 10 minutes. Taste for seasonings.
In a separate bowl, add cut raw celery, some finely chopped garlic and a splach of olive oil. Season with salt, pepper and chopped parsley. When serving add a bed of room temperature celery mixture on the base of plate and top with the hot bean and meat mixture. Goes well with a touch of hot spice and parmigiano cheese.
