Butternut Squash Spaghetti
Peel a couple medium sized butternut squash or any sweet pumpkin. You want about 2 cups per serving.Remove seeds( or purchase already peeled) , cut into medium cubs. Put aside.
In a sauce pot add a good splash of olive oil , add 4-5 garlic cloves, one onion sliced, cubed squash and cook on low heat covered for about 25/35min (stir from time to time/ season with salt - pepper). Use a wooden spoon to mash everything together as much as possible. No worries if you leave some chunky. Taste for seasonings and put aside.
Cook spaghetti ( or short pasta ) until aldente . Drain and add to the squash . Be sure to toss with A LOT of grated parmigiano cheese , chopped parsley and a dash of olive oil.
