Butternut Squash Bolognese Sauce
Peel a couple medium sized butternut squash or any sweet pumpkin. You want about 2 cups per serving.Remove seeds( or purchase already peeled) , cut into medium cubs. Put aside.
In a sauce pot add a good splash of olive oil , add 4-5 garlic cloves, one onion sliced, cubed squash and add a good amount of sausage meet or ground beet. Continue to cook on low heat covered for about 25/35min (stir from time to time/ season with salt - pepper). Use a wooden spoon to mash everything together as much as possible. No worries if you leave some chunky. Taste for seasonings and put aside.
Cook penne pasta until aldente . Drain and add to the squash . Be sure to toss with A LOT of grated parmigiano cheese , chopped parsley and a dash of olive oil.
Chef notes;
Vegetarian option/ substitute meat with other veggies (especially cabbage)
Substitute meat with chicken, only you will need to season better with herbs, the chicken will never give as much flavor as the ground beef/or sausage would.
