Soak the cannellini beans in cold water and place in the refrigerator over night.
Pour the water and beans into a large sauce pot. Add a few crushed garlic cloves, 2- 3 stalks of cut celery,3 medium cut carrots. Season with some salt and pepper. Bring to a boil , simmer low for 2-3 hours.
Note:
Go to your Italian market and pick up some Friselle. Break up the friselle in a serving dish and pour the fagioli over it.Otherwise toasted Italian bread can work. Be sure to splash a good quality olive oil in every dish when serving
