In a large frying pan add lots of chopped onion, shredded leftover chicken, sliced pitted olives and a handful of shredded cabbage. Add a good splash of olive oil and begin to saute on low heat stirring from time to time until everything is cooked down ( about 10 minutes). Season with salt and pepper. Put aside.
In a large bowl break up leftover bread extremely small. Add the chicken mixture and toss well. Gradually add some chicken broth to help break up/soften the bread while you mix- you want a soft stuffing consistency(use your hands when mixing, makes it easier).Make medium sized thin hamburger sized cakes from this mixture.
Heat a splash of olive oil in a a non stick pan and fry on both sides until very crispy.See photo.
When serving, top each cake with a fried egg or poached egg
