Chef Guerrieri shows us how to get the most of your fireplace. Before beginning, allow the fire to burn down to lots of hot coals. Spread the coals along the front. Wait about 30 minutes and allow the bricks to get super hot. Brush the area you are going to use by pushing the coals back (see photo).
Simply purchase a good pizza dough or make one from scratch. Cut the dough into small pieces (about tennis ball size) for individual sized pizzas - the smaller the pizza the easier to handle in fireplace.
Stretch the dough until it is very thin. About thickness of a dollar coin. Top with sauce and mozzarella (not to much or it becomes to heavy).
Slide raw pizza off of the plate onto the hot brushed brick area .Do not leave this alone! It will be cooked in less than 5 minutes. Rotate as soon as the edges begin the brown/"lightly-burn"
