What's brunch without bread to accompany our eggs? Here's a new way to have it all together.
Quickly sauté some onions with olive oil. Add your favorite sausage or meat and continue to cook. Put aside to cool off.
Pan fry some sliced potatoes in vegetable oil until cooked. Put aside .
In a large bowl, beat some eggs and add your favorite cheeses cut into small cubes or shred. Add the cooked meat and potatoes along with a good pinch of fresh parsley and mix well.
Cut up some left over bread into small cubes.Add enough bread to mixture and toss well.
Use olive oil or butter to line a baking pan and pour mixture . Preheat oven and bake at 350 for about 20/25 minutes or until cooked through.
