Ever wonder what to do with that overgrown squash you forgot to pick from your garden?
Simply slice the squash into large rings about 1/2 inch thickness and remove the seeds.
Prepare an egg batter beating some eggs and adding a bit of flour to thicken.Add a good amount of chopped rosemary.
Pass the rings through flour and shake off excess flour then the rings through the egg mixture. Pan fry on both sides until golden brown . Be sure to use a non stick frying pan and a good splash of vegetable oil when frying.
Season with some salt and pepper before serving.
